"There are so many complex layers of flavour, and it will be different for everyone. But I always smell a gentle peat aroma at first which reminds me of island home fires when I was growing up. This gentle smoke can also be found on the first sip along with toasted maltiness. I can also taste homemade apple sauce and small machair flowers, particularly white clover whish springs up on our west coast each summer. Mixed spices appear, and an old fashioned sweetness from things like candied ginger, vanilla and honeycomb. Finally there is a long clotted cream note mixed with a lasting sense of new leather."
